A quick and easy dish to rustle up after school, college or work. You can use pre-mixed bags of stir fry, or you could make your own mix with what you have in the fridge! Use a veg peeler to get slithers of veg such as carrots and courgette.
You could grow your own ingredients for stir fry – chard, cabbage, carrot, radish, courgette, garlic, spring onion, and beans can all be grown easily in the UK during the summer. You could also try growing your own mushrooms with a kit box!
I used Super Noodles primarily because they are cheap and easy, but you can use whichever noodle type you prefer. Why not try boodles – butternut squash noodles?
Allergens: garlic, onion, pepper, soy sauce, mushrooms. These are what I used in the step by step below, but you can use whatever you like!
This dish can be eaten just as veg & noodles, or veg & meat/replacement, or veg, meat/replacement and noodles! I eat mine with a Quorn fillet, and my partner eats his with steak.
