Use whatever veg you and your family like. This dish also used tinned pineapple chunks and cherry tomatoes for a twist. Control the heat by adding more curry powder for a hotter curry, or more yogurt to make it milder.
The quantities shown in this blog fed us for three meals…! This curry can be frozen, but is also a great lunchbox meal.
